
 |  | SCANPAN Classic Now At The Inkwell SCANPAN Classic cookware is manufactured in Denmark, by the largest European manufacturer of pressure-cast aluminum cookware. Modern, functional Scandinavian design combines with old world craftsmanship to bring you SCANPAN Classic. SCANPAN has only recently been available in the U.S., since January of 2002, and is the successor to the original SCANPAN titanium. This newer line, SCANPAN Classic, features an updated, patented technology that results in a “closed” nonstick surface. The best way to understand SCANPAN’s technology is to step back and look at traditional nonstick cookware. Most of them are great in releasing food, but that’s where they stop. We all know how annoying it is to try and keep sausage, bacon and eggs in the tiny circle in the middle of the pan to cook and fry. Then, the pans themselves become warped and curled into undulating metal that will not sit still on the burner. Over time, the nonstick surface comes off, finds its way onto the food, and now its time to buy a new pan, again. Then there are the more expensive, heavy-duty, pots and pans. While they cook evenly, without hot-spots, the food tends to stick to these traditional pros, unless you use a lot of butter or oil. That’s where SCANPAN Classic comes to the rescue. They start with the best tradition in professional cookware; pressure-cast aluminum, because it is an excellent conductor of heat. The pressure-cast aluminum is literally forged under 200 tons of pressure, which is the only way to truly eliminate hot-spots and create a perfectly even base. After having pressure cast the raw pan body, the super hard ceramic-titanium compound is superheated to 36,000 degrees Fahrenheit, at which point it liquefies into a plasma state. The liquid plasma is then fired into the pan surface at twice the speed of sound, causing the compound to literally anchor itself in the pan surface, becoming one with the pan. If you were to look at the SCANPAN Classic surface under a microscope you would see myriad of mini-craters; all similar in shape and size, which were created when firing the ceramic-titanium compound into the raw aluminum body. These craters are then filled with their specially formulated NEW TEK non-stick compound. Since the non-stick compound is in the craters, rather than on them, the super hard ceramic-titanium compound protects the non-stick compound from being scraped away. An independent laboratory conducted a test with a weighted metal spatula. They ran the spatula across the pan 300,000 times and by the end of the test about one third of the spatula was ground away and the non-stick surface and performance remained perfectly intact. There are a few other things that set SCANPAN Classic apart from the rest of the field. Their glass lids not only allow you to see what is cooking, but are interchangeable too. The entire line is also oven safe to 500 degrees Fahrenheit allowing you to finish your dishes in the oven without worry. Also, the SCANPAN Classic surface requires no seasoning or pre-oiling, allowing you to just heat and cook. Plus, the pans are dishwasher safe, which makes cleanup a snap. |
